Our friends at the Sacramento Natural Foods Co-op continue to offer a variety of classes, on cooking, community education, and other topics of interest. Below are some of the upcoming cooking classes; for updated, complete listings, please check the SNFC website.

Saturday, October 10, 10 a.m. – 12 p.m. A Taste of Argentina. Go on a Latin American culinary journey, and experience dishes such as: walnut, celery and blue cheese empanadas; humita (corn and squash tamales); sausages with chimichurri sauce; carrot and potato pureé; fresh cheese with quince paste; and cookies with dulce de leche. ($30 for co-op owners; $39 for non-owners.)
Saturday, October 10, 3:00 – 5:30 p.m. Lasagna Workshop. Learn to make traditional lasagna with Bolognese sauce; timbale of lasagna Modena style; and polenta lasagna with Italian sausage. ($35 for co-op owners; $45 for non-owners.)
Monday, October 12, 6:30 – 8:30 p.m. Spectacular Seafood Pastas. Learn to make linguine with clams in a white wine sauce; spaghetti with tomato sauce and mussels; farfalle with pesto and grilled shrimp; and seafood ravioli. ($30 for co-op owners; $39 for non-owners.)
Tuesday, October 13, 6:30 – 8:30 p.m. Pizza Perfetto! Learn to make three different types of pizza dough; whole wheat calzone with grilled chicken; thin-crusted pizza with prosciutto; Chicago deep-dish style with sausage and mushrooms; and quattro formaggi (corn meal crusted pizza with four Italian cheeses and mushrooms). ($30 for co-op owners; $39 for non-owners.)
Saturday, October 17, 10 a.m. – 12:30 p.m. Soulful Vegan Soups. (Part One of a three-part series of classes on “the vegetarian kitchen.”) Learn to make French lentil stew with potatoes and tarragon; smoky black bean and vegetable soup; spiced butternut squash and coconut milk bisque; and potato and celery-root leek soup. ($30 for co-op owners; $39 for non-owners.)
Monday, October 19, 6:30 – 8:30 p.m. Crèpes from Around the World. Learn to make Indian dosas filled with potato; Italian crespelle with Swiss chard and ricotta; Vietnamese rice flour crèpes with chicken and shrimp; and classic French dessert crèpes with sautéed apples and caramel sauce. ($30 for co-op owners; $39 for non-owners.)
Thursday, October 22, 6:30 – 8:30 p.m. Thai and Vietnamese Cooking With Mai Pham. Join chef Mai Pham, owner of the Lemon Grass restaurant, on a journey of some of her favorite dishes from Thailand and Vietnam. She’ll show you how to make: spicy roasted chicken with rice; lemongrass tofu with shiitake mushrooms; green curry with shrimp; kabocha squash and basil and cucumber salad. ($35 for co-op owners; $45 for non-owners.)
